Fall Creek Thrasher
Coffee Roast:
Fall Creek Thrasher coffee starts out with a Guatemalan small farm coffee. We choose to use a Guatemalan coffee due to its low acidity and natural chocolate tasting undertone. Pecans have a bit of bitterness backend so the Guatemalan bean will blend well and cover up a majority of the pecan bitterness.
The Guatemalan coffee was roasted to a little over a medium roast. Comparing to other Whiskey Morning Coffee blends, I would say that this roast is a little darker than the Common Joe, but lighter than the Texian.
Toasted Pecan:
The first step in creating the Fall Creek Thrasher was to get the pecans. A close family friend has a pecan orchard out in Brock, TX. The Whiskey Morning Coffee crew went out to Brock and handpicked all the pecans used in the coffee.
Once we got the pecans, we started cracking them and roasting at 500 degrees for 12-14 minutes. We have learned from making pecan whiskey at Sledge Distillery that a lot of the sweetness of a pecan comes from the shell, especially the thin shell on the inside that separates the meat of pecan. Because we knew this, we added some of the shells to the toasting and final process.
Brown Sugar:
The second flavor added is the brown sugar. With the Fall Creek Thrasher, we added a touch of light brown sugar into the coffee grounds. The light brown sugar ads just a hint of sweetness to the coffee but does not overpower or make it "sweet" tasting.
Conclusion
The Fall Creek Thrasher has already become a fan favorite. People love pecan coffee, and this is the first one with no flavoring. Instead, you can see and taste the real pecan chunks mixed into the coffee grounds. If you already like a pecan coffee, it's a must try.
